Produktinformationen "Pepsin (EC 3.4.23.1)"

Pepsin aus Schweinemagen. Seine inaktive Vorstufe ist das von den Hauptzellen der Magenschleimhaut sezernierte Pepsinogen. Pepsinogen wird bei einem sauren pH-Wert unter 3 in das proteolytisch wirksame Pepsin gespalten.

Pepsin gehört zu den wichtigen proteolytischen Enzymen im Verdauungssystem. Pepsin ist ein Phosphoprotein, bzw. eine Endopeptidase die bevorzugt Peptidbindungen hinter aromatischen Aminosäuren spaltet. Das Enzym besteht aus 327 Aminosäuren und hat ein Molekulargewicht von etwa 35.000 Dalton und ein katalytisches pH-Optimum von ca. 1,8. Im nicht sauren Mileu zeigt Pepsin praktisch keine Aktivität.
